Use the Photoshop Channel Mixer to convert color images to black and white
The Photoshop Channel Mixer is my favorite way to convert color photos to
black and white.
Unlike other options, such as desaturation, use of the Channel Mixer allows you to control how much of the red, green, and blue light are used in the final image.
Let's start with the image we first adjusted in
levels,
and then sharpened with the
Unsharp Mask filter.
 To open the Channel Mixer window, click on Image in the menu bar, then select Adjustments and Channel Mixer:  Check the Monochrome box to convert to black and white.
Moving the sliders, or changing the values, for each of the source channels will affect how much of those is used in the black and white image. The Constant slider is used to increase black or white in the final image. To get the best results, your image should have the sharp contrast you get from both deep black and bright white areas. For this reason, make sure you've included a
levels
adjustment or adjustment layer.
